SPICY APPLE & WALNUT MUFFINS

INGREDIENTS:

 

2 cups self raising flour
1 cup caster sugar
1 tsp cinnamon
¾ cup chopped walnuts
½ tsp mixed spice
¼ tsp nutmeg
425g can unsweetened apples
¼ cup Alfa One Rice Bran Oil
2 eggs beaten well
1 tsp lemon rind

INSTRUCTIONS:

 

Preheat oven to 180 degrees centigrade and lightly wipe some oil around a non-stick 12 piece muffin tray or line with 12 paper baking cases. Sift the dry ingredients into a bowl. Thoroughly mix the wet ingredients. Toss the apple on top of the dry ingredients. Fold the wet ingredients into the dry with a hand whisk. Fold and lift the whisk through gently until roughly mixed. Divide the mixture evenly between the muffin tray pans or paper cases and bake for 20-25 minutes or until golden brown. Remove when cooked and allow to cool on a wire rack.
